Raw Broccoli Salad with a Sweet and light Orange Dressing


Broccoli is one of those things that you hate as a kid but most probably love as an adult. The key to enjoying veggies such as broccoli, kale, brussel sprouts etc is not to over cook them. The mushier they get, the more it brings out that after taste people hate.

Broccoli tastes great while crunchy and firm. Raw broccoli salads are one of those things that can make or break a person's preference for broccoli. If you haven't ever tried raw broccoli with some kind of dressing or dip, you really are missing out on a lot.

This salad is sooooo refreshing and tasty that you won't even know that you just ate a whole bowl of dark green veggies that your body craves. The crunch from the broccoli, the sharp bite of the onion, the sweet raisins and dressing and the sunflowerseeds just seals the deal! I highly recommend that you give it a try.




Ingredients
2 heads of broccoli florets separated
1 med red onion thinly sliced
1/4 cup raisins
1/4 cup toasted sunflower seeds
2 tbsp of mayo or yogurt
1 tbsp milk

3 tbsp orange marmalade
1 tsp honey
1 tsp of olive oil
salt and pepper to taste

Method
Mix the last 5 ingredients together in a bowl and set aside.
Wash and chop your veggies and place in serving bowl before covering with the dressing.
Top with the raisins and seeds.
Its that simple!
