Cauliflower and Potato Curry---Aloo Kopir Dalna


This simple and homely recipe is known for its comforting feel and aroma. I think this is the first dish I have ever cooked. When I was 12 or so, there was a day that my mother was really sick and there was nothing to eat, so I looked in the fridge, found these ingredients and with a little bit of assistance, cooked it, to everyone's amazement! So that is your proof of how simple it is. If a 12-year-old can make it, no doubt you can too!




Ingredients
1/6 cup of oil
1 med cauliflower separated into florets
2 med potatoes, peeled and chopped
1 med onion sliced
1 med tomato sliced
1 tbsp ginger garlic paste
1 green chilli slit or to taste
1 tsp turmeric divided
1 tsp cumin
salt to taste
water as needed

Method
1) In a frying pan, pour some oil and add the potatoes along with a sprinkling of salt and turmeric and cook covered until golden brown and almost done.
2) Repeat step 1 with cauliflower florets.
3) In separate pot, add the remaining oil and drop in the onions, ginger garlic paste and chilli and cook till they are sweated out.
4) Add the ground spices and a little water and cook for a few minutes.
5) Add the tomato and a cup more water before dropping the cooked potato and cauliflower in and cooking for 5-6 mins.
6) Serve with steamed rice or roti.
